Sam's Story

  

Hello I am Sam Head Chef of the Brewery House would like to give you a little insight to my culinary journey I first wanted to be pizza chef and did a week work experience work at pizza margherita in Lancaster and it all started back when was 15 and took my first job at truck haven  as kitchen assistant and I soon realised I preferred work to school so I decided I would enrol on hospitality diploma course at Lancaster and Morecambe college  and spent 2 years in college main kitchen /bistro/pastry section and restaurant and achieved all my certificates with city and guilds and my first real chef experience  in the industry was my catering manager called Harvey Jones who had earned 2 rosettes and put me working around the Mitchell’s of Lancaster pub estate then I was given a chance at Lancaster university and spent 4 years working there for there hospitality department and this where I really found myself as chef working alongside great catering manager Julian at the university I got to get involved in some crazy stuff like working alongside the England football teams head chef who had Michelin star experience cooking for members off the royal family and heads of bae systems the chancellor and his private guest local mayors then I went on to try something completely different a live in job in the lakes at one of the busiest café  in the lake district the bluebird in beautiful Coniston  where I worked as sous chef and foh team leader and was a great experience and learning working with Matthew the head chef who taught me loads and I have now been working in around the lakes for the past 9 years and working up to head chef under the guidance of mike brown who has vast experience of hospitality at all levels and 2 years at the pheasant inn bassenthwaite as sous chef for the inn collection group which taught me modern way of doing day to day tasks and now have family and need something close to home and Kieran took me on as head chef at the Brewery House in beautiful Harrington on the west coast of Cumbria.
